Odia Dalma is a traditional and comforting dish from Odisha made with toor dal, seasonal vegetables and aromatic spices. Unlike regular Indian dal, Dalma combines lentils and vegetables in one wholesome preparation.
CURRYKITE Dalma Masala, Turmeric Powder and Cumin Seeds give this recipe its authentic Odia aroma and balanced homemade flavour. Serve it with steamed rice, jeera rice or traditional Odia meals.
Wash the toor dal thoroughly two or three times until the water becomes mostly clear.
Wash, peel and cut the potato, pumpkin, raw papaya, brinjal and raw banana into medium-sized pieces.
Place the washed dal, chopped vegetables, tomato, turmeric powder, bay leaf, salt and three cups of water in a pressure cooker.
Cook for approximately three whistles over medium heat. Allow the pressure to release naturally before opening the cooker.
Gently mix the cooked dal and vegetables. The vegetables should remain soft but should not completely dissolve.
Add a little hot water when the Dalma appears too thick.
Add two teaspoons of CURRYKITE Dalma Masala and mix gently.
Simmer the Dalma uncovered over low heat for five minutes.
Heat ghee or oil in a small pan. Add mustard seeds and cumin seeds.
When they begin to crackle, add the dried red chilli and asafoetida.
Pour the hot tempering over the cooked Dalma and mix gently.
Add grated coconut when desired and simmer for another two minutes.
Garnish with fresh coriander leaves and serve hot.
